2 cups Strawberries
1 cup Orange Juice
1 cup Coconut Milk
1 Vanilla Bean
5 Mint Leaves

Hull and chop the strawberries, discarding the stems. Scrape the insides of the vanilla bean out with the back of a knife.

Combine all ingredients in a food processor or blender and puree. Serve chilled and
garnish with strawberries.

Tip This particular soup is sweet and best served cold, like a gazpacho.
