8 cups Kale
½ cup Water
4 Tbsp Pine Nuts
2 cloves Garlic
2 Tbsp Lemon Juice
4 Tbsp Olive Oil
Sea Salt and Black Pepper (to taste)
In a bowl big enough to fit all ingredients, combine the minced garlic, lemon juice, olive oil, chopped
tomato, and pine nuts.
Heat the water in a pan over medium-high heat (~7). Once bubbles begin to form in the water, add the
kale (cut into manageable pieces) and reduce the heat to medium (~5). Cover and cook for 5 minutes,
tossing every so often to ensure even cooking.
Once wilted, remove from heat and drain the excess water. Add the kale to the garlic and lemon juice
mixture and toss to coat. Season with sea salt and black pepper and serve immediately.
