2 Green Plantains
¼ cup Red Onion
¼ cup Red Bell Pepper
¼ cup Breadcrumbs
2 Tbsp Carrots
1 small clove Garlic
1 Green Onion
½ Tbsp Coconut Oil
1 tsp Sea Salt
½ tsp Black Pepper

These are going to be so easy, you won’t believe that you ever bought them at the store! First, put some sea-salted water on the stove to boil.
Peel the green plantains: cut the ends off, run a knife along the peel, get your fingernails under there,
and peel the outside off. This will not be like peeling a banana; it will be harder.
Cut the plantains into 3” chunks and add to the boiling water. Boil for 10 minutes. Drain.
Now here’s the easy part if you have a food processor. Add the plantains, egg, red onion, red bell
pepper, Breadcrumbs carrots, garlic, green onion (sans the white part), ½ tablespoon coconut oil, sea salt, and black pepper. Keep pulsing until all ingredients are well incorporated. If you don’t have a food
processor, you’ll want to mash the plantains as best you can, mince everything else, and combine.
Now we want to take about 2 tablespoons and roll it into a ball. I like to roll all of these up before I start
frying; it keeps the ball moving (haha, pun intended?), and I don’t have to stop in the middle to make
Heat the coconut oil over medium-high heat (~8). Drop a little piece of batter into the oil to test. If it
immediately starts sizzling, we’re good to go. Drop hush puppies in one layer in the oil and cook for
about 4–5 minutes or until golden brown and done all the way through.
Tip The green plantains must be green. Not a little yellow, not brown, and definitely not black. Green.
Very, very green.
