½ head Cabbage
¼ cup Red Onion
½ cup Carrots
1 Tbsp Coconut Crystals
3 Tbsp Coconut Vinegar
1 Tbsp Cilantro
¼ cup Mayonnaise
½ Tbsp Poppy Seeds
Sea Salt and Black Pepper (to taste)

This one is an easy one. You just chop the cabbage as fine or as thick as you like. Do the same with the
onions and carrots and add them all to a bowl.

Next, combine the coconut crystals, coconut vinegar, cilantro, Mayonnaise, poppy seeds, sea salt, and
black pepper. Once the coconut crystals and sea salt are dissolved, add to the vegetables.

Put the coleslaw in the refrigerator and chill for at least 30 minutes, which will allow the flavors to
mingle and the cabbage to slightly soften.
