2 cups Baby Spinach
2 cups Mixed Spring Greens
½ Gala Apple
¼ cup Pomegranate Seeds
¼ cup Toasted Pecans
¼ cup Butternut Squash
2 Tbsp Green Onions
3 Mint Leaves
Sesame Ginger Salad Dressing
Optional: Sesame Orange Roasted Duck

In a bowl, combine the spinach, mixed greens, chopped apple, pomegranate seeds, chopped toasted pecans, diced butternut squash, chopped green onions, and chopped duck and toss in dressing.

Tip If you plan to toast your own pecans, heat a pan over medium-high heat (~7). Then add the pecans and 1 teaspoon of honey. Toast until browned.
