1 Honeycrisp Apple
1 Fennel Bulb
¼ cup Walnuts
Lemon Vinaigrette

Combine all ingredients for the dressing in a blender and blend until thoroughly incorporated (if you
like a thicker dressing, slowly add in more oil while whisking to emulsify the dressing).

Core and slice the apple into ” slices. Then do the exact same thing to the fennel. You will want to cut
off the tops, then take the cores out, then thinly slice the rest (or use a food processor and discard the cores).

Toss the apple with the fennel and walnut pieces and then toss with the Lemon Vinaigrette dressing until
coated to your liking. The recipe for Lemon Vinaigrette makes more than what we usually use for this
salad, so just put as much as you’d like on it.

Tip If you are Primal and eat a little dairy, goat cheese is wonderful on this salad.
